Preparation
  1. Begin by cooking the gnocchi according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Stir in the sliced sun-dried tomatoes and cook for another 2-3 minutes.
  4. Pour in the heavy cream and bring to a gentle simmer. Gradually stir in the grated Parmesan cheese until melted.
  5. Add the cooked gnocchi and fresh spinach to the skillet, gently stirring until the spinach wilts and everything is combined. Season with salt and pepper.
