Ingredients
  

For the Stir-Fried Noodles
  • 1 lb fresh wide rice noodles Look for this at an Asian grocery store.
  • 8 oz protein of your choice (beef, chicken, pork, shrimp, or tofu) Tender pieces of chicken are recommended.
  • 4 cloves garlic, chopped For added aroma.
  • 2 large eggs Adds creaminess.
  • 4 to 6 stalks Chinese broccoli Substitute with bok choy or regular broccoli if needed.
For the Sauce
  • 3 to 4 tbsp vegetable oil Helps achieve nice wok hei.
  • 1 tbsp soy sauce You can never have too much soy!
  • 2 tsp soy sauce For marinating the protein.
  • 1.5 tsp fish sauce Authentic flavor, skip if vegetarian.
  • 2 tbsp oyster sauce Adds depth and umami.
  • 4 tsp granulated sugar Helps balance the saltiness.
  • 1.5 tsp Golden Mountain sauce or Maggi Seasoning Optional but recommended for flavor depth.
  • 2 tsp Thai black soy sauce For color and flavor.
  • 1/4 tsp sugar Balances soy sauce.
  • to taste ground white pepper For a peppery kick.
  • to taste chili vinegar Optional for added spice.

Method
 

Preparation
  1. Marinate the protein in 2 tsp of soy sauce and 1/4 tsp of sugar for about 15 minutes.
  2. If using fresh noodles, microwave them until hot and soft (about 1-2 minutes). For dried noodles, cook according to package instructions but undercook them slightly.
  3. In a bowl, combine oyster sauce, fish sauce, 1 tbsp soy sauce, Thai black soy sauce, and 4 tsp of granulated sugar. Stir well.
Cooking
  1. Heat 1 tbsp of oil in a wok or large pan over high heat. Add the marinated protein and cook until browned (about 3-5 minutes). Remove and set aside.
  2. In the same pan, add 1.5 tbsp of oil and chopped garlic, cooking until golden (about 30 seconds). Then crack in the eggs and scramble until just set.
  3. Add Chinese broccoli and stir-fry for 10-15 seconds.
  4. Add a portion of rice noodles and the prepared sauce, mixing thoroughly.
  5. Return the cooked protein to the pan and mix to combine flavors (about 1-2 minutes).
  6. Serve immediately, garnished with ground white pepper and chili vinegar if desired.

Notes

For optimal wok hei, ensure your wok is very hot. Cook in batches if necessary to avoid overcrowding.
