  • 1 cup all-purpose flour Sifted for an airy texture
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened Use for richness

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder For leavening
  • 1/4 teaspoon salt
  • 1 cup dried cranberries Sweetened with fruit juice preferred
  • 1/2 cup white chocolate chips
Frosting Ingredients
  • 1/4 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon milk Add until desired consistency is reached

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 3-5 minutes.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. Gradually mix in the sifted flour, baking powder, and salt until just combined.
  5. Gently fold in the dried cranberries and white chocolate chips.
  6. Spread the batter evenly in the prepared pan and bake for 20-25 minutes.
  7. Let the bars cool completely in the pan before frosting.
Frosting
  1. Beat together the softened cream cheese and powdered sugar, adding milk until smooth and spreadable.
  2. Frost the cooled bars generously, cut into squares, and enjoy.

Notes

For a healthier version, use natural sweeteners and consider adding chia seeds. Store the bars wrapped in plastic wrap for up to three months.
