  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Peppermint Extract Opt for pure peppermint extract for authentic taste.
  • 1/4 teaspoon Salt
Frosting Ingredients
  • 1 cup Powdered Sugar
  • 2 tablespoons Heavy Cream
  • a few drops Red Food Coloring

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, stir together the flour, baking soda, and baking powder until well combined.
  3. In a large bowl, cream together the softened butter and white sugar until the mixture is smooth and fluffy.
  4. Beat in the egg, then add vanilla and peppermint extracts, combining all the wet ingredients thoroughly.
  5. Gradually blend in the dry ingredients, mixing until just combined.
  6. Roll rounded teaspoonfuls of dough into balls, then place them onto cookie sheets. Flatten each ball slightly using the bottom of a glass dipped in sugar.
  7. Bake for 8 to 10 minutes in the preheated oven, or until the edges are golden and the centers are firm.
Frosting
  1. While baking, prepare the frosting by beating together powdered sugar, heavy cream, and red food coloring until smooth.
  2. Once the cookies are completely cooled, spread the peppermint frosting generously on top.
