Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a saucepan, gently melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla until well combined.
- Beat in the flour, cocoa powder, and salt until fully combined. Gently fold in the chopped Mint Aero bars, distributing them evenly.
- Pour the batter into the prepared pan, spreading it out evenly.
Baking
- Bake for 25-30 minutes, or until a toothpick inserted comes out with moist crumbs.
Topping Preparation
- While the brownies are cooling, heat the heavy cream in a saucepan until just simmering.
- Pour the hot cream over the chopped dark chocolate and peppermint extract. Stir until smooth and glossy.
- Once the brownies have cooled completely, pour the chocolate mint topping over them and spread it evenly.
- Refrigerate for at least 1 hour to set before slicing into squares.
Notes
Serve warm with whipped cream or vanilla ice cream and a mint sprig. Avoid using the microwave to reheat.
