Base Ingredients
  • 1 cup unsalted butter
  • 2 cups sugar Consider using coconut sugar for lower glycemic index.
  • 4 large eggs Substitute with flax eggs for a vegan version.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Use gluten-free flour for a gluten-free version.
  • 1 cup cocoa powder High-quality cocoa like Valrhona recommended.
  • 1/2 teaspoon salt
  • 1 cup chopped Mint Aero chocolate bars Feel free to use other mint-flavored chocolates.
Topping Ingredients
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped Callebaut dark chocolate recommended.
  • 1 teaspoon peppermint extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a saucepan, gently melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla until well combined.
  3. Beat in the flour, cocoa powder, and salt until fully combined. Gently fold in the chopped Mint Aero bars, distributing them evenly.
  4. Pour the batter into the prepared pan, spreading it out evenly.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted comes out with moist crumbs.
Topping Preparation
  1. While the brownies are cooling, heat the heavy cream in a saucepan until just simmering.
  2. Pour the hot cream over the chopped dark chocolate and peppermint extract. Stir until smooth and glossy.
  3. Once the brownies have cooled completely, pour the chocolate mint topping over them and spread it evenly.
  4. Refrigerate for at least 1 hour to set before slicing into squares.

Notes

Serve warm with whipped cream or vanilla ice cream and a mint sprig. Avoid using the microwave to reheat.
