Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- In a separate mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Mix in the maple syrup, egg, and vanilla until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined to keep the cookies tender.
- Take a tablespoon of dough, flatten it slightly, place a small amount of jam in the center, and wrap the dough around it to form a ball.
- Roll the dough ball in powdered sugar, ensuring an even coating, and place on a baking sheet lined with parchment paper.
Baking
- Bake for about 10-12 minutes until the edges are set but the centers remain soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a healthier version, swap refined sugar for monk fruit and add seeds like chia or flaxseed. To reheat, preheat oven and bake cookies for 5-7 minutes.
