  • 1 cup brown sugar, packed
  • 1/4 cup maple syrup Opt for pure maple syrup for best flavor.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. In a separate mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Mix in the maple syrup, egg, and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined to keep the cookies tender.
  6. Take a tablespoon of dough, flatten it slightly, place a small amount of jam in the center, and wrap the dough around it to form a ball.
  7. Roll the dough ball in powdered sugar, ensuring an even coating, and place on a baking sheet lined with parchment paper.
Baking
  1. Bake for about 10-12 minutes until the edges are set but the centers remain soft.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a healthier version, swap refined sugar for monk fruit and add seeds like chia or flaxseed. To reheat, preheat oven and bake cookies for 5-7 minutes.
