  • 6 large large eggs
  • 1 cup cottage cheese Rich in protein and calcium.
  • 1 cup shredded cheddar cheese Use aged cheddar for optimal flavor.
  • 1/2 cup diced vegetables (e.g., bell peppers, spinach, onions) Use fresh, organic vegetables.
  • to taste Salt and pepper Season generously.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, cottage cheese, and shredded cheddar until the mixture is smooth and creamy.
  3. Stir in the diced vegetables and season generously with salt and pepper.
  4. Grease a muffin tin with cooking spray or oil.
  5. Pour the egg mixture into the muffin tin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes, or until set and slightly golden.
  7. Let cool a few minutes before removing from the tin. Serve warm or refrigerate for meal prep.

Notes

For a healthier option, add fresh herbs like parsley or chives, and consider swapping cheeses to lower the fat content. These egg bites can be frozen for up to 2 months and are great for meal prep.
