Preparation
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold in the mixed berries, distributing them evenly in the dough.
- In a separate bowl, whisk together the cream and vanilla extract, then add this mixture to the dry ingredients. Stir until just combined.
- Turn the dough onto a lightly floured surface and knead gently to bring it together. Shape into a round disc about 1 inch thick.
- Cut into wedges and place them on the prepared baking sheet.
Baking
- Bake for 15-20 minutes, or until golden brown.
- While the scones bake, prepare the glaze by mixing powdered sugar and milk until smooth.
- Drizzle the glaze over the warm scones before serving.
Notes
Serve on a platter garnished with fresh berries and a dusting of powdered sugar. Pair with Earl Grey tea or lemonade. Can be made vegan or gluten-free.
