  • 1 head head of garlic Use fresh, firm garlic bulbs; organic is best.
  • 1/3 cup neutral oil Use a high-quality oil like grapeseed, canola, or avocado oil.

Method
 

Preparation
  1. Chop the garlic into pieces no bigger than 1/8 inch (3 mm).
  2. In a small pot, add the neutral oil and turn the heat to medium.
  3. Test the oil by tossing in one piece of chopped garlic. Once it bubbles, add the rest.
  4. Turn the heat down to medium-low, ensuring the oil just covers the garlic.
  5. Stir the garlic constantly and aim for a golden color, which takes about 5-8 minutes.
  6. Once golden, remove the garlic with a metal sieve and allow the oil to drip into a bowl.
  7. Store the fried garlic and oil separately in sealed containers in the fridge.

Notes

Store in sealed containers; they can last up to two weeks in the fridge. For longer storage, pack in an airtight container and freeze for up to three months.
