Preparation
- Chop the garlic into pieces no bigger than 1/8 inch (3 mm).
- In a small pot, add the neutral oil and turn the heat to medium.
- Test the oil by tossing in one piece of chopped garlic. Once it bubbles, add the rest.
- Turn the heat down to medium-low, ensuring the oil just covers the garlic.
- Stir the garlic constantly and aim for a golden color, which takes about 5-8 minutes.
- Once golden, remove the garlic with a metal sieve and allow the oil to drip into a bowl.
- Store the fried garlic and oil separately in sealed containers in the fridge.
Notes
Store in sealed containers; they can last up to two weeks in the fridge. For longer storage, pack in an airtight container and freeze for up to three months.
