  • 2 cloves garlic, thinly sliced or chopped Optional for a more aromatic profile
  • 2 Tablespoons shallots, thinly sliced Optional, adds sweetness and texture

Preparation
  1. Gather all ingredients and chop the Thai chilies finely.
  2. In a small bowl, combine the chopped chilies, fish sauce, lime juice, and optional garlic and shallots.
  3. If using garlic and/or shallots, let the mixture sit for at least 10 minutes to allow the flavors to meld.
  4. Taste the condiment and adjust any element (like lime juice for acidity) according to your flavor preference.
  5. Use immediately or transfer to an airtight container. This condiment can be stored in the fridge for up to two weeks.
