Method
Preparation
- Place the graham cracker crust in a 9-inch pie plate or utilize a ready-made crust.
- In a medium saucepan, whisk together the granulated sugar, unsweetened cocoa powder, cornstarch, and salt until evenly combined.
- Slowly whisk in the whole milk, stirring until smooth and lump-free. Then whisk in the egg yolks.
Cooking
- Cook the mixture over medium heat, stirring constantly until it thickens to a pudding-like texture, about 5-7 minutes.
- Remove from heat and stir in the chopped chocolate, butter, and vanilla until smooth.
- Pour the chocolate filling into the prepared crust, smoothing the top, and press plastic wrap directly on the surface to avoid skin. Chill for at least 4 hours.
Topping
- Beat the heavy whipping cream with powdered sugar until fluffy peaks form. Spoon or pipe it generously over the chilled pie.
- Garnish with chocolate shavings, slice, and serve cold.
Notes
For a healthier version, swap refined sugar with monk fruit sweetener and add seeds for extra fiber. For variations: make it vegan with plant-based ingredients or gluten-free with alternative crusts.
