Ingredients

  • 1 can cranberry sauce
  • 1 can crushed pineapple, drained
For the Cream Cheese Layer
  • 1 package cream cheese (8 oz), softened

For the Cake Layer
  • 1 box yellow cake mix Use gluten-free version if needed.
  • 1/2 cup unsalted butter, melted Melted butter helps retain moisture.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cranberry sauce and drained crushed pineapple. Spread this mixture evenly into the bottom of a greased 9x13 inch baking dish.
  3. In another bowl, whip the softened cream cheese with sugar until smooth and creamy. Drop spoonfuls of this mixture over the fruit layer, spreading it gently.
  4. Evenly sprinkle the dry yellow cake mix over the cream cheese layer, ensuring uniform coverage.
  5. Drizzle the melted butter over the top of the cake mix, making sure to cover as much of the mix as possible.
Baking
  1. Place the dish in the preheated oven and bake for 45-55 minutes, or until the cake is golden brown and bubbly.
  2. Allow the cake to cool slightly before serving. Enjoy it warm or at room temperature.

Notes

For a healthier version, consider replacing refined sugar with natural sweeteners and adding chia seeds for extra fiber. Serve this cake garnished with a dollop of whipped cream and fresh mint leaves.
