Preparation

- In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well blended.
- Gradually incorporate the dry ingredients into the wet mixture, alternately adding the cooled coffee until fully combined.
- Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, leaving adequate space between each.
Baking
- Bake for 10-12 minutes until the edges are set. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Filling
- For the filling, beat together the powdered sugar, softened butter, vanilla extract, and heavy cream until smooth and creamy.
- Once the cookies are cooled, spread or pipe the filling onto the flat side of one cookie and sandwich it with another cookie.
