  • 1 pound ground beef Opt for grass-fed for deeper flavor.
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chiles
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
Layering Essentials
  • 8-10 pieces corn tortillas Can substitute with whole wheat for added fiber.
  • 1 cup sour cream Can substitute with cashew cream for vegan option.
  • 2 cups shredded cheese (cheddar or Mexican blend) Use freshly grated for a creamier melt.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a heavy-bottomed cast iron skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are translucent.
  3. Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Let it simmer for about 10 minutes.
Layering
  1. In a greased 9x13-inch baking dish, layer tortillas at the bottom, followed by half of the beef mixture, a layer of sour cream, and a sprinkle of cheese. Repeat the layers, finishing with a rich cheese layer on top.
Baking
  1. Place the dish in the oven and bake for 25-30 minutes until bubbly and the cheese is melted and golden-brown.
  2. Let it cool for a few minutes before serving.

Notes

For added health benefits, consider using whole wheat tortillas or adding chopped spinach. Pair with fresh cilantro and avocado for a delicious finish.
