Preparation

- In a heavy-bottomed cast iron skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are translucent.
- Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Let it simmer for about 10 minutes.
Layering
- In a greased 9x13-inch baking dish, layer tortillas at the bottom, followed by half of the beef mixture, a layer of sour cream, and a sprinkle of cheese. Repeat the layers, finishing with a rich cheese layer on top.
Baking
- Place the dish in the oven and bake for 25-30 minutes until bubbly and the cheese is melted and golden-brown.
- Let it cool for a few minutes before serving.
Notes
