Ingredients

Main Ingredients
  • 2 pieces boneless, skinless chicken breasts Opt for free-range organic chicken for richer flavor.
  • 2 tablespoons garlic butter
  • 1 cup penne pasta Consider using whole grain or gluten-free penne for added fiber.
  • 1 cup heavy cream Can substitute with half-and-half or full-fat coconut milk for a lighter option.
  • 1 cup shredded cheddar cheese Use freshly grated cheese for the best melt.
  • 1 cup grated parmesan cheese Use freshly grated cheese for enhanced flavor.
  • to taste Salt and pepper
  • Fresh parsley for garnish

Method

Preparation
  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, melt garlic butter over medium-high heat. Season the chicken with salt and pepper before placing it in the skillet.
  3. Cook the chicken until it is golden brown and cooked through, about 6-7 minutes per side. Once done, remove the chicken and let it rest for a few minutes.
Cooking
  1. In the same skillet, pour in the heavy cream and bring it to a gentle simmer.
  2. Gradually stir in the shredded cheddar and grated parmesan cheese until they melt and combine into a creamy sauce.
  3. Toss the cooked penne pasta into the sauce until every piece is well-coated.
  4. Slice the rested chicken and place it on top of the pasta.
  5. Garnish generously with fresh parsley and serve immediately.

Notes

For a heartier meal, consider adding vegetables like spinach or broccoli. To reheat, place in an oven-safe dish and cover; heat at 350°F until warmed through. Never use a microwave to prevent ruining the sauce's creaminess.
