  1. Heat the olive oil in a large, heavy-bottomed cast iron skillet over medium heat.
  2. Add the sliced onions and cook, stirring occasionally, until they start to soften (about 10 minutes).
  3. Stir in the brown sugar and continue to cook for another 10-15 minutes, until the onions are caramelized and golden brown.
  4. Add the balsamic vinegar, salt, and pepper; stir well to combine the ingredients.
  5. Reduce the heat and let it simmer for about 15-20 minutes until the mixture thickens.
  6. Allow the jam to cool before serving.

Notes

For an impressive presentation, spread your caramelized onion jam on toasted baguette slices or use it as an elegant topping for grilled meats. Pairs beautifully with dry white wine or light lager. To make it vegan, ensure balsamic vinegar contains no animal-derived ingredients.
