Ingredients

Brownies
  • 1 1/2 cups mashed ripe bananas Use very ripe bananas for maximum sweetness and flavor.
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar Can substitute with monk fruit or coconut sugar for a healthier option.
  • 2 large eggs Can substitute with flaxseed meal for a vegan option.
  • 1/2 cup sour cream Replace with Greek yogurt for a protein boost.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with a gluten-free flour blend.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional) Opt for freshly toasted walnuts for enhanced flavor.
Frosting
  • 1/2 cup unsalted butter
  • 3 cups powdered sugar Adjust the quantity if frosting is too runny.
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
  • 1/4 cup chopped walnuts for topping

Method

Preparation
  1. Preheat the oven to 350°F and grease or line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until mostly smooth.
  3. Stir in the melted butter, granulated sugar, eggs, sour cream, and vanilla extract until combined.
  4. Add the flour, baking soda, and salt; mix just until the batter comes together.
  5. Gently fold in the chopped walnuts if using.
  6. Spread the batter evenly in the prepared pan.
Baking
  1. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  2. While the brownies are cooling, melt the unsalted butter for the frosting in a saucepan over medium heat until golden brown.
  3. Remove from heat and whisk in the powdered sugar, vanilla extract, and milk until smooth.
  4. Spread the frosting over the slightly warm brownies and sprinkle with chopped walnuts.
  5. Let the frosting set and then slice to serve.

Notes

Serve warm with ice cream or a drizzle of chocolate sauce for an indulgent dessert. Brownies are perfect for storing in an airtight container for up to a week.
